One of my favourite past times at Christmas is getting messy in the kitchen making home made gifts. This week I experimented with creating my own take on the traditional Italian sweet Panforte. It turned out rather delicious, and it is completely refined sugar, dairy and grain free. I would encourage you to use this as the base recipe and then add in any flavours or ingredients that appeal to your senses, I was wanting to use ginger and brandy so I included them in to the mix!! 2 cups almonds ground in a food processor to desired consistency
1 cup hazelnut meal 
1/2 cup roasted almond butter
2 tbsp sugar free crystalized ginger 
1/2 cup organic prunes
1/2 cups organic figs 
3 tbsp maple syrup 
4 tsp brandy essence or brandy
1/2 tsp lemon essence 
1/4 tsp Himalayan rock salt 
3/4 cup cocoa 
1/4 cup orange juice
1 tsp orange zest
Combine all the dry ingredients in a large mixing bowl. Meanwhile, soak the dried fruit in boiling water for five minutes and set aside to cool before blending. Add in the rest of the wet ingredients and work together using your hands.
To finish, roll in to logs, press in to a cake tin or make in to bite size balls. Store in freezer.
