Matcha Protein Slice ‘w’ Sarah Wilson’s Gut Lovin’ Gelatin!

I have been following Sarah Wilson’s recent venture in to manufacturing her own Australian made gelatin powder, and after reading a few different articles on the health benefits that can be gained from including it in your diet, so I decided to support her new product and see what results may show up for me as a result.

So far I have tried three different recipes, this one being the more recent, which is a total winner!! I combined it with another locally made product I am currently having a love affair with, Byron Bay’s Bare Blends Matcha Green Tea WPI  (which amazingly doesn’t upset my dairy sensitive gut). I also used The Broken Head coconut milk company! It feels really nice in my little soul to be able to use such high quality local products.

So far I have found using the product to be really satiating as a snack which is really easy on the gut to digest (great for people like me who are always on the go, and can’t be slowed down by heavy food in the middle of the day), it has also assisted me in getting to sleep (read Sarah’s “15 People Who Should Be Eating Gelatin” Blog post by clicking here)... and I do believe that the combination of the matcha and gelatin combined has increased my energy levels & endurance in the gym & during running sessions… which is a total bonus!

INGREDIENTS:

1.5 cups of Broken Head coconut milk (or any other pure coconut milk)
1/3 cold cup water
3 tbsp Sarah Wilsons ‘Gut Lovin Gelatin’
2-3 tbsp Bare Blends Matcha WPI
1/2 tsp vanilla essence
1 tbsp rice malt syrup (optional)

DIRECTIONS:

Firstly, add the gelatin to the cold water and put it aside to set for 5 minutes.

Meanwhile, heat the coconut milk with the rice malt syrup and vanilla, stirring, until it is just about to boil. Remove from the heat and mix in the protein powder.

Mix in the gelatin, and let it cool for a moment before giving it a quick whiz – I put mine in the Nutribullet for twenty odd seconds (you could also use a stick blender), then place in 20x20cm baking dish, and let it set in the fridge for about an hour.

Once it is set, cut in to squares, as per Sarah’s recommendation and enjoy as a protein & nutrient filled snack any time!! For more about the benefits of gelatin, go to Sarah Wilsons website by clicking here and see if your gut could do with some lovin’ too.
